Quick and Healthy Quinoa Salad
A practical quinoa salad for lunch or dinner
This quinoa salad combines cooked quinoa, crisp vegetables, fresh herbs and a bright lemon dressing. It works as a light main dish, a side, or a make-ahead lunch. The ingredients are flexible, so the recipe can be adjusted around what is available.
Ingredients
- 1 cup dry quinoa
- 2 cups water or unsalted vegetable stock
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 small red onion, finely chopped
- 1 cup cooked chickpeas, drained
- 1 handful parsley or cilantro, chopped
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 small garlic clove, finely grated
- Salt and black pepper to taste
How to prepare the quinoa
- Rinse the quinoa thoroughly in a fine sieve. This removes much of the naturally bitter coating.
- Combine the quinoa and water or stock in a saucepan. Bring to a boil, cover, and reduce the heat.
- Simmer for about 15 minutes, or until the liquid is absorbed.
- Remove the pan from the heat and leave it covered for 5 minutes.
- Fluff with a fork and spread the quinoa on a tray or wide plate so it cools without becoming heavy or sticky.
Assemble the salad
Whisk the olive oil, lemon juice, garlic, salt and pepper in a large bowl. Add the cooled quinoa, cucumber, pepper, tomatoes, onion, chickpeas and herbs. Toss until everything is evenly coated. Taste and add more lemon, salt or pepper if needed.
The salad can be served immediately, but resting it for 15 to 20 minutes allows the dressing to season the quinoa more evenly.

- Add feta, goat cheese or diced avocado for extra richness.
- Use roasted vegetables when raw vegetables are not preferred.
- Add toasted almonds, pumpkin seeds or sunflower seeds for crunch.
- Replace chickpeas with white beans or cooked lentils.
- For a sweeter contrast, add chopped apple, grapes or dried cranberries.
Storage and make-ahead tips
Store the salad in a covered container in the refrigerator for up to three days. If using avocado, add it shortly before serving. Fresh herbs and cucumber have the best texture during the first two days.
For meal preparation, keep delicate greens and crunchy toppings separate and combine them with the quinoa mixture when serving.
