Waldorf Salad: Quick and Light Recipe

This lighter Waldorf salad combines crisp apples, celery, grapes, and walnuts with a fresh yogurt dressing. It is quick to prepare and works well as a light lunch, side dish, or starter.

Ingredients

  • 2 crisp apples, cored and diced
  • 2 celery stalks, thinly sliced
  • 1 cup seedless grapes, halved
  • 1/3 cup walnuts, roughly chopped
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon honey, optional
  • Salt and freshly ground black pepper, to taste
  • Lettuce leaves, optional, for serving

Preparation

  1. Place the diced apples in a bowl and toss them with the lemon juice to help prevent browning.
  2. Add the celery, grapes, and walnuts.
  3. In a small bowl, combine the yogurt and honey. Season lightly with salt and pepper.
  4. Pour the dressing over the salad and toss gently until the ingredients are evenly coated.
  5. Serve immediately or chill briefly before serving. Spoon onto lettuce leaves if desired.

Helpful Tips

  • Choose a firm, crisp apple so the salad retains its texture.
  • Toast the walnuts briefly in a dry pan for a deeper flavor, then allow them to cool before adding them.
  • If preparing the salad ahead, keep the walnuts separate and stir them in shortly before serving.
  • For a thinner dressing, mix the yogurt with a small splash of water or additional lemon juice.

Optional Variations

Add raisins or dried cranberries for extra sweetness. For a more substantial meal, include cooked chicken. Sunflower seeds can replace the walnuts for a nut-free variation.
